A multi-level coffee roastery and levain bakery
So, we’re opening a new flagship location for Messenger Coffee Co. Well, it’s a cafe, wholesale coffee roasting facility, cupping lab, office, grain mill, sourdough bread and pastry bakery, good place to go to lunch spot, rooftop deck with a fireplace, future site of delicious pairing and prix fixe dinners, event space. Yeah, seriously! All with an open transparent floor plan so we can share it with you.
(From our blog)
One day in the summer of 2012 I paced around in the driveway, on the phone, with my friend roasting coffee on a tiny coffee roasting machine in the background and pitched a long-shot idea about a multi-level levain bakery and a coffee roasting facility to Bonnie from Boor Bridges Architecture. I was roasting coffee, I had a business plan. “I want to make really great coffee and bread and serve them together and take care of coffee farmers better than the status quo and use awesome grains for bread from good farmers. I want the building to be like the awesome spaces you’ve done.”
Somehow, it actually happened. We found funding from people gracious enough to roll with our (at the time) naievete. We partnered with a group of coffee folks who really know the craft and shared the vision for sourcing and serving coffee differently. We worked together to build something.
Through an incredible feat of effort that has involved dozens of people and many years, we opened the landmark Messenger Coffee + Ibis Bakery space at 1624 Grand on October 21.
I don’t really know how else to write more about this. Maybe someday I’ll write a blog about the whole process.
