Real bread is au levain. Tartine popularized it in the United States, and it’s been a huge part of my life (I now co-own 3 au levain bakeries in Kansas City):

Whenever I travel, I’m on the lookout for that #realbread.

I’ve put together a rough and tumbles map website of bakeries that are doing it right out there (I know there are many more I haven’t added yet!)
